We use only Berkshire-breed pigs that are humanely raised on pasture on a cooperative of small family farms in the Midwest.
These farms are dedicated to natural methods, creating the best environment for the pigs.
Berkshire pork is being recognized for its unique qualities: redder meat, with distinctive, rich flavor and marbling that makes each bite heavenly.
Antibiotic & Hormone Free
90% of our vegetables are organic and come from regenerative agriculture that improve soil.
We select the best tasting vegetables at peak season.
In season, we work with local farms in the Redlands and Homestead that believe in regenerative farming.
We grow organically 90% percent of all the herbs we use.
We carefully select our artisanal cheeses from small cooperative farms in Europe and USA.
All our other cheeses are all organic.
All our dairy is organic and/or from grass-fed cows, harvested respectfully.
We only fry in coconut oil.
We make all our sauces, mayos, curries and dressing from scratch.
We use first cold pressed extra virgin olive oil.
We salt our dishes with pink Himalayan salt & sel de Guerande from France.
Our chicken, bone, beef and vegetables stocks are all organic.
All our breads are baked in house.

We use the highest grade of almond flour to bake our goods.
